'Pepe and the Parade' - Read and Rise October 2020
I can't believe it's October already! I am, however, very excited to start our Hispanic heritage month here on Read and Rise! And we're going to be starting the month with my absolute favorite thing about exploring different cultures - food! I have a whole week of recipes to share with you all and I hope you come along on this cultural culinary adventure with me this week!

Recipe 1: Breakfast
The main character in this story, Pepe, is Mexican but he joins his friends from various Latin countries in a parade to celebrate all the different cultures. For breakfast, we will join Pepe in having Mexican chilaquiles!

This is how our chilaquiles came out! I'll be honest, I was short on time and energy after a crazy morning so I used tortilla chips from a bag and quickly blended up some store bought salsa instead of making my own salsa roja. I'm sure it's probably much tastier when the chips and salsa are homemade and fresh, but we topped it with homemade guacamole, added some queso, beans, and fried eggs and the kids and I gobbled it up! It's definitely a healthier breakfast alternative to all our typical American sugar and syrup-filled breakfasts...and it works perfectly for those mornings that Squidgy wants chips and guacamole for breakfast (that happens more often than you'd expect...).
